Quite possibly one of the most dramatic dining spaces in Macau, The Eight is immediatel­y recognisab­le by its sultry black interiors where vibrant goldfish seem to be suspended in its inky depths, with massive crystal chandelier­s casting their sparkle over the space. Backstage, in the kitchen, veteran Chinese chef Joseph Tse runs a tight ship where substance and style go hand-in-hand. Be sure to seek out some of the more labor intensive dishes that showcase the hard-earned skills of the team, such as the signature chicken broth with fluffy handshaped fish balls and silken tofu sliced hundreds of times so that it blossoms into a chrysanthe­mum flower in the crystal clear soup. The honeyglaze­d barbecue pork, too, is a mustorder, while braised beef rib in “The 8” style is rich with its glossy glaze, and falls apart on the palate. Desserts are whimsical and guests are presented with a tiny cup of milk tea and a Portuguese tart to end the meal.
