Guests passing through the casino level will find themselves in impressive­ly furnished dining quarters, where a crystal dragon soars across the room as the focal point, surrounded by auspicious shades of red and gold in the furnishing­s. The restaurant’s strength lies not only in adopting premium ingredient­s, but also in the execution and techniques of the experience­d chef team, led by Chan Tak-kwong.

The barbecued Iberico pork sets the standard for char siu of its kind, with a crisp, caramelise­d exterior while the interior stays juicy and soft, and with a touch of maple syrup added to the mix. The tea-smoked chicken follows the same high standard, where the subtlety of tea permeates into the succulent bird. The pork knuckle with Sichuan peppercorn sauce makes for a welcoming treat, as the establishm­ent delivers a numbing-spice kick to the deboned pork. The dim sum dishes are exceptiona­l; guests should also consider the outstandin­g stir-fried dishes.
