Tatler Dining Guide - Hong Kong
Wing Lei
MOP2000 per person
Upholding traditions of fine Cantonese dining is a grand mission that’s well executed at Wynn Macau’s Wing Lei. Guests passing through the casino level will find themselves in impressively furnished dining quarters, where a crystal dragon soars across the room as the focal point, surrounded by auspicious shades of red and gold in the furnishings. The restaurant’s strength lies not only in adopting premium ingredients, but also in the execution and techniques of the experienced chef team, led by Chan Tak-kwong.
The barbecued Iberico pork sets the standard for char siu of its kind, with a crisp, caramelised exterior while the interior stays juicy and soft, and with a touch of maple syrup added to the mix. The tea-smoked chicken follows the same high standard, where the subtlety of tea permeates into the succulent bird. The pork knuckle with Sichuan peppercorn sauce makes for a welcoming treat, as the establishment delivers a numbing-spice kick to the deboned pork. The dim sum dishes are exceptional; guests should also consider the outstanding stir-fried dishes.
