No dessert lover should leave Macau without visiting Pierre Hermé Lounge, which serves impeccably executed, wonderfully creative dishes that live up to the chef’s “Picasso of Pastry” tagline. Set amidst the monochromatic, geometric lines of the Morpheus complex, the minimalist open space feels a little stark—but it’s the beautifully presented desserts that provide the real colour and artistry. The trio of Morpheus Signature dishes also brings the theatrics, with guests given small hammers to break into the desserts; each features a symphony of exquisitely layered tastes and textures, with the fruity floral interplay of the raspberry, rose and lycheestarring Isaphan and the caramelised hazelnuts and flaky pastry of 2,000 Feuilles both sensational. The savoury dishes on the all-day cafe menu aren’t to be sniffed at, either—a comfortingly rich croque monsieur is textbook stuff—and the drinks list, which features a good range of by-theglass pours alongside cocktails, teas and soft drinks is also impressive.
