No dessert lover should leave Macau without visiting Pierre Hermé Lounge, which serves impeccably executed, wonderfull­y creative dishes that live up to the chef’s “Picasso of Pastry” tagline. Set amidst the monochroma­tic, geometric lines of the Morpheus complex, the minimalist open space feels a little stark—but it’s the beautifull­y presented desserts that provide the real colour and artistry. The trio of Morpheus Signature dishes also brings the theatrics, with guests given small hammers to break into the desserts; each features a symphony of exquisitel­y layered tastes and textures, with the fruity floral interplay of the raspberry, rose and lycheestar­ring Isaphan and the caramelise­d hazelnuts and flaky pastry of 2,000 Feuilles both sensationa­l. The savoury dishes on the all-day cafe menu aren’t to be sniffed at, either—a comforting­ly rich croque monsieur is textbook stuff—and the drinks list, which features a good range of by-theglass pours alongside cocktails, teas and soft drinks is also impressive.
