Flying the flag for Mexican spirits is Jay Khan’s beloved bar named for, naturally, the machete-like tool used to harvest agave—the key ingredient in tequila.

The aim is to demysitify and challenge the stereotype­s that have long plagued the producers of agave spirits such as tequila and mezcal, and introduce the public to the possibilit­ies of these diverse products. First and foremost a cocktail den, COA’s menu is dedicated to using esoteric Mexican spirits such as raicilla, sotol, charanda and tuxca—and if any of those didn’t ring any bells, all you have to do is ask one of the seasoned staff who can explain the nuances of each. To encourage exploratio­n, the bar has eschewed traditiona­l tasting flights in favour of offering smaller portions of each agave spirit so guests can get a more holistic overview. Look out for drinks such as the Ancho Highball, a refreshing tequila-based cocktail.
