The Old Man

A true gem in Central, The Old Man keeps raising the bar for mixology with their refreshing attitude and intriguingly scientific approach to crafting new flavours. The menu will take some navigating, but every member of staff is well versed in the components of each and every cocktail and have proven to be on the money each time we’ve asked them to recommend drinks based on our favoured flavour profiles. Classic signatures here include The Sun Also Rises, a beguiling mix of fat-washed Applejack, fresh curry gin, sweet vermouth sous-vide pandan leaves and makrut lime leaf. Since the bar is a tribute to the writer Ernest Hemingway, there is a section on his favourite cocktails including the daiquiri and gimlet.
