Flint is not your average hotel restaurant—a prominent bar area leads into the main dining room, interiors are spacious and chic with subtle rustic accents that add to the charm. The vibe is relaxed and ideal for enjoying the menu of well executed classics. Contrary to its name, the menu presents a range of food in addition to its grill offerings, highlighti­ng fresh seasonal ingredient­s. The combinatio­n of flavours and textures in the salt-baked beets with labneh, sorrel, pistachio, and buckwheat honey leaves you feeling satiated; while the decadent king crab linguini has a delightful seafood flavour, thanks to the Hokkaido uni cream and bottarga, which is completed with a slight chilli kick. For dessert, ask servers for the daily special if you want a sweet surprise. Alternativ­ely, we recommend the basil lemon creation, which balances sweet and tart notes with basil foam, lemon confit, and lemongrass sorbet, the whole shebang s erved in the shape of a lemon. There are plenty of wines to choose from, available both by the glass and bottle, but the creative cocktails by bartender Bryson Rivera are standouts. Service is well-oiled, as expected for a hotel establishm­ent, and servers are easily able to offer recommenda­tions.
