A daring yet winning combination is the scampi, garlic, chilli, cacao nibs and passion fruit tossed with perfectly al dente spaghettoni. Seared scallops are superbly springy in the middle and pair excellently with the earthy lentil soup with chestnuts and the sweet tangy Montepulciano reduction.
