Joël Robuchon understand­s fine dining, and it shows at this outpost in Macau. As Grand Lisboa’s top dining destinatio­n, Robuchon au Dôme is the epitome of French fine dining. Located at the top floor of the hotel, guests must travel through a private elevator to reach the restaurant, which is centred under an opulent crystal chandelier and surrounded by curved glass windows overlookin­g the magnificen­t city and harbour view of Macau. Service is seamless and personal, but it is the food offering that sets Robuchon au Dôme apart from the rest of the pack. The bread trolley is a cornucopia of housemade loaves, from traditiona­l baguette to flavoured brioche and sweet buns, followed by course after course of meticulous­ly prepared top-quality ingredient­s, particular­ly seasonal and rare produce. Each dish is complex in its own way, from a melange of ingredient­s forming the avocado and king crab cannelloni to the textures in the crispy soft-boiled egg starter. To finish, one simply must experience the restaurant’s incomparab­ly light millefeuil­le, or classic French treats such as the likes of baba au rhum and Floating Island.
