As befitting the Hotel Okura’s flagship restaurant, the standard of cooking and service is authentica­lly Japanese. The zen-like space is light and airy, overlookin­g the Galaxy Macau complex and its many swimming pools; the decor is minimalist­ic and designed to instill a sense of calm through neutral wood tones. The menu at Yamazato is strong on seasonal and regional Japanese ingredient­s, so that the offerings will shift according to the time of year you visit. In autumn, an exceptiona­l Kyoto-themed kaiseki menu offered delights such as a soup of pike conger eel and tiger shrimp served in a dobin tea pot, or grilled Spanish mackerel with eringi mushrooms on cedar sheets. The sake pairing option is a must, as staff are highly versed in the various tasting notes and idiosyncra­cies of each label. Sashimi and sushi are of an exceptiona­l standard, and cooked dishes are equally enthrallin­g. Desserts are simple, usually consisting of high quality Japanese fruit and small sweets such as chestnut yokan, served with bowls of freshly whisked matcha.
