Ash in­sol­u­ble in di­lute hy­drochlo­ric acid is an in­di­ca­tor of dirt and dust in the food prod­uct – so, lower is bet­ter. As per FSS Reg­u­la­tions, on dry ba­sis it should not be more than 1.3 per cent by weight. As per FSS Reg­u­la­tions, chilli pow­der should be free from ex­tra­ne­ous colour­ing mat­ter – that is, free from added colours. In lab­o­ra­tory re­sults, all brands were found free from ex­tra­ne­ous colour­ing mat­ter.
