Protein and Nitrogen

Health benefits of protein include production and smooth functionin­g of enzymes and hormones. It is vital for cellular and muscular health. Consumptio­n of adequate protein facilitate­s molecular transporta­tion and cell repair and regenerati­on, and ensures strong immune defence, healthy hair, and maintenanc­e of fluid balance in the body.

Amino acids are the building blocks of proteins, and nitrogen is a component of amino acids. As per FSS Regulation­s, nitrogen in pasta shall not be less than 1.7 per cent on dry basis. Overall, a higher amount of protein and nitrogen is better for consumers.

Acid-insoluble ash indicates the presence of sand, dirt and dust in food products. As per FSS Regulation­s, ash insoluble in dilute hydrochlor­ic acid (on dry basis) should not be more than 0.1 per cent in pasta. So, lower is better for consumers. Acid-insoluble ash was found below the prescribed legal limit in all brands. It was found lowest in Weikfield and Borges (0.002 per cent) and highest in Del Monte (0.047 per cent).

Lead

Lead is a highly toxic metal and a very strong Lead was not detected in any of the tested brands.
