Health ben­e­fits of pro­tein in­clude pro­duc­tion and smooth func­tion­ing of en­zymes and hor­mones. It is vi­tal for cel­lu­lar and mus­cu­lar health. Con­sump­tion of ad­e­quate pro­tein fa­cil­i­tates molec­u­lar trans­porta­tion and cell re­pair and re­gen­er­a­tion, and en­sures strong im­mune de­fence, healthy hair, and main­te­nance of fluid bal­ance in the body.

Amino acids are the build­ing blocks of pro­teins, and ni­tro­gen is a com­po­nent of amino acids. As per FSS Reg­u­la­tions, ni­tro­gen in pasta shall not be less than 1.7 per cent on dry ba­sis. Over­all, a higher amount of pro­tein and ni­tro­gen is bet­ter for con­sumers.

Acid-in­sol­u­ble ash in­di­cates the pres­ence of sand, dirt and dust in food prod­ucts. As per FSS Reg­u­la­tions, ash in­sol­u­ble in di­lute hy­drochlo­ric acid (on dry ba­sis) should not be more than 0.1 per cent in pasta. So, lower is bet­ter for con­sumers. Acid-in­sol­u­ble ash was found be­low the pre­scribed le­gal limit in all brands. It was found low­est in Weik­field and Borges (0.002 per cent) and high­est in Del Monte (0.047 per cent).
