Aïoli (ay-oh-lee)

Spanish in origin, aioli is a sauce that is made from the combinatio­n of garlic and olive oil. At times, egg is also added to it. The sauce has a thick texture and mayonnaise like appearance. Saffron, chilli and lemon are added to the sauce for flavouring. It is popularly served as a dip for vegetable crudité, boiled eggs and shellfish.
