MARZIPAN EASTER EGGS

Ingredient­s

11/2 cup almonds 11/2 cup sugar, powdered Rose water Natural colours (Optional)

Method

Soak the almonds for a few hours or until you’re able to remove their skin. You can also blanch the almonds if you are short on time. To blanch the almonds place your raw almonds into the boiling water. Let them boil for exactly one minute.

Drain the almonds immediatel­y into a strainer and rinse them with cold water to cool them. Dry the almonds with a paper towel. Use your fingers to gently squeeze them and loosen the skin from them.

Dry the almonds, and use a food processor to break them into crumbs, then add the powdered sugar and rose water and process the mix further until clumps form

Place the paste into a bowl and make sure it is mixed well. Form into a ball and add 1 or 2 drops of natural colour based on your preference.

Shape the marzipan with hand to look like eggs.
