Try sawan delicacies to spread sweetness!

Colourful month of Sawan has set-in and so have the ‘crunchy’ goodies that are synonymous with this season. The city ‘mithawalla­hs’ are offering a range of sweet delicacies which are turning out to be the best pick of the month for many.

Kesaria and malai ghevars, anarsa goli, variants of pheni, malai cham cham are some of the favourite delicacies of the season. Not just in big restaurant­s small-time ‘mohalla’ shops too are preparing anarsa goli that are a complete sell out.

With lesser people moving out due to coronaviru­s outbreak, home delivery is the best bet for the sweet lovers. Ordering from food aggregator­s app as well as from sweet shops private online delivery these are being considered as the best option.

“Within the city limits people are opting for courier and home delivery as lesser people think to venture out. Since this is ‘betiyon ka tyohaar’ (festival for daughters) many send sawan delicacies to their married daughters. In the current phase there are very few who want to visit the shop personally because getting it home delivered is the choice of the day,” said Ravindra Gupta of Chhappan Bhog.

Sellers have introduced season special section on their app where a whole range of sawan delicacies have been listed. “Some are even opting for or adding dry fruits to the sawan gifting option as it’s healthy and boosts immunity,” he further said.

Telling more about the gifting tradition, Pankaj Gupta of 215-year-old Ram Asrey Sweets, “Gifting sawan delicacies on the auspicious days of haryail teej and raksha bandhan was an age old tradition followed mainly in Rajasthan. But, now this has spread all-over and I have seen it growing manifold in Lucknow.”

Though this delicacy could be made throughout the year but it won’t taste same in other months. “The ‘kararapan’ crunch and balanced softness comes due to the natural moisture. The ‘jaalidaar’ effect of ghevar is not possible in other months as it becomes dense otherwise. The more it rains and better it tastes. It is made fresh every day while anarsa goli are prepared in small batches so that people can get it piping hot,” he adds.

Though home delivery is the best bet these days but Srajal Gupta of Madhurima Sweets says that only 10-15% of their clients are ordering online. “This is a matter of choice. Customers come, choose for themselves in real and then buy their choice of ghevar. Anarsa goli also tastes best when consumed hot. Even in these tough times, people trust us and are prefer to visit and buy. It’s for them that we are preparing small batches and mini size ghavars. Preparing small portions is a tough call but we are doing it for the ease of customers,” he said.

Sharing the process of dishing out ghevar he said that its prepared in small stencils in steel kadhai which is covered and then done on clay bhatti (burner) with lakdi ka koyla (wooden coal). “We feel blessed when by the end of the day everything is consumed,” concludes Gupta.
