You can enjoy eggs based on your personal taste preference and skill level — from the simple scrambled egg to more complex dishes like egg biryani. This World Egg Day, we bring you tips that will ensure you get to enjoy eggs at their best.

One common issue people have with eggs is its distinct odour, which can often make them hesitant to include it in their diet. Chef Reetu Uday Kugaji has a trick to cover the smell: “Just add a little lemon juice, vinegar or milk to the egg mixture before cooking it.” You can choose other ingredient­s to mask the stink depending on the recipe. “In case of a cake, add vanilla extract, coffee, cinnamon powder, clove powder, or orange juice,” adds Kugaji.

And India has its own stock of unique egg preparatio­ns! “Locals as well as tourists adore ande ki bhurji and pav with cutting chai.
