FALAFEL AND HUMMUS WRAP

Ingredient­s:

300gm parboiled chickpeas, 5 garlic cloves, 20gm fresh parsley, 20gm fresh coriander, 2gm cumin, 15gm sesame seeds, 2 wholewheat flatbreads or 2 chapattis, 50ml extra virgin olive oil (for cooking falafel), 50gm onion (finely sliced),1 tomato (sliced),1 head lettuce, 1 lemon’s juice, 5gm paprika powder, salt to taste, freshly ground black pepper to taste Method:

■ In a blixer, add the chickpeas, garlic, 1 teaspoon olive oil, parsley, coriander, cumin, salt pepper and coarsely ground the mixture

■ Take out 80% of the mixture from the blixer, add sesame seeds and fine paste the remaining mixture to be used as hummus

■ Form balls of the coarse mixture and press the chickpea balls in your palms to form equal-sized patties In a large frying pan, over medium heat, heat 3tbsp olive oil. Add the patties to the hot pan with olive oil and cook evenly turning them around

■ Take the two chapattis or wholewheat bread. Layer it with lettuce, sliced onions and tomatoes, and dust with paprika powder and seasoning. Further layer it with hummus and falafel

■ Alternatel­y, to spice the wrap, chilli sauce can be added, or as a dipping sauce, guacamole can be added to enhance taste and nutritiona­l value.
