1 cup spinach, shredded 1 cup bottle gourd, grated 1/2 cup sprouted moong, boiled 1/4tsp turmeric powder 1/4tsp asafoetida 3tbsp gram flour 2tbsp oil 2tsp green chilli paste

1/2tsp sugar Salt to taste Oil for greasing

Though the city has received scanty rainfall so far, according to the weather bureau the monsoons are already here. The first monsoon showers bring relief from ell.bMyany the scorching summer heat s of us have a penchant for street food. But, during the rains, the fear of diseases prevents people from opting for those delicious pakodas, samosas, bhel etc. But, there is always a solution at hand. Why not whip up a sumptuous food item that comes closest to an average Delhi street delicacy right into the confines of your home? Below, city chefs share recipes of a few dishes that are wholesome, delicious and safe to eat since you have prepared them yourself.

8-10 red bell peppers, cut in halves 5 garlic cloves with the peel 2 cups onion, chopped 2tbsp olive oil

2 sprigs of thyme 2 bay leaves 4 cups vegetable broth 1tsp hot sauce

1-2tbsp rice vinegar 1/2tsp ground pepper 1/2tsp salt place in a large ziplock bag to steam for around 10 minutes.

Heat a large pot and add the oil, thyme, bay leaves and onions. Cook for 10 minutes until onions are soft. Add the broth, hot sauce, salt and pepper. Squeeze the garlic cloves into the pot. Then, peel the charred skin off each pepper and place it in the pot. Reduce the heat, cover and cook for another 20 minutes. Remove the bay leaves and thyme sprigs.

Using a handheld immersion blender or a standard blender and blend the mixture until smooth. Add the vinegar and salt again if needed. Serve with extra thyme leaves.
