ZUCCHINI AND LENTIL PAKODA

Ingredient­s

100gm lentils (soaked), 100gm green and yellow zucchini each, 50gm onion, 10gm cumin powder, 20gm coriander powder, 1tsp lemon zest, 40gm fresh coriander, 10gm chilli flakes, 5gm salt, oil for frying

Method

Finely chop the green and yellow zucchini, onion and fresh coriander

Drain the lentils and remove all the water In a large bowl, combine the lentils, zucchini, onions, spices, salt and lemon zest

Heat the oil in a large pan and fry the pakoda mixture portioned out in the oil Serve hot.
