Do you believe in clean eating, which arguably is one of the most popular buzzwords of 2024? What if your vegetarian dining experience comes with a gourmet spin? Kiara Soul Kitchen champions recipes based on fresh, plant-based and minimally processed ingredients. Paired with a cafe, the newly opened second outlet at Ashok Vihar Phase 2 (the first one is based in GK-II M Block Market) promises food for those with a ‘green soul’. Co-founded by brothers Manav and Madhav Windlass, the restaurant takes an “innovation and whole-green (food) forward” approach to cooking.
“We are proud to serve meals for vegans, vegetarians, Jains (who prefer no onion and garlic), and more food preferences, serving cosy, home-styled recipes with the glam of innovative and elevated cooking,” Manav shares.
The restaurant is becoming a rage for ladies lunches and parties where vegan or vegetarian food with a contemporary accent is a priority. Meeting the growing demand the eatery emphasises on sustainable and organic dishes.
“From organically grown bok choy, broccoli, lemongrass, and basil to Thai green curry made from scratch, we are all about fresh, flavourful and mindful meals,” shares Manav.
In Kiara Soul Kitchen’s world, guests are welcomed with a amuse bouche (pita with three types of hummus), traditional Thai curries coexist with barley Chipotle bowls and whole grain quinoa salads are paired with yoghurt dressing. An achari foxtail millet khichdi steals the show alongside their Panch Anaj Ki Roti, made using whole wheat, maize, bajra, besan and amaranth
flour. There’s also whole wheat pizzas and khamiri naan, keeping in mind digestive health.
The restaurant also offers a mindful eating experience at the Soul Cafe. Guests can unwind here while sipping on tulsi mulethi mocha, Ashwagandha latte and more functional coffees, with the beans being sourced from a single estate.
The idea of opening a vegetarian-focussed gourmet restaurant came from Windlass duo’s dream of introducing the plant-based, clean, fine-dining concept to India. “Close attention is paid to the quality and quantity of ingredients to create a mindful dining experience,” shares Manav, adding, “Most of our desserts are sweetened with dates. We use naturally-brewed soy sauce in our oriental cooking and lean on Vedic-approved alternatives like rock salt.”
The brothers recognised the rising demand for clean dining in India and set up Kiara Soul Kitchen with a “goal to expand the vegetarian food category in the fine dining section”.
