In Ra­jasthan, yet an­other fortress-palace turned jet-set play­ground is about as fresh as yes­ter­day’s news. Here is where Alila Bis­hangarh bucks the trend. Lo­cated in the Araval­lis be­tween Delhi and Jaipur, Fort Bis­hangarh piles up high on a gran­ite hill with 360-de­gree views; the re­con­structed new res­i­den­tial area houses four dif­fer­ent cat­e­gories of suites—each of the 59 suites has been cus­tom built to ac­cess the stun­ning views with 22 dif­fer­ent lay­outs so each room holds a sur­prise. Food is plen­ti­ful; while Amarsar is an in­door spe­cial­ity restau­rant, Nazara is an out­door grill on the ter­race.
