In its third annual edition of the great global event, Nostalgia at 1911 Brasserie, The Imperial celebrated “Goût de France / Good France” recently, in which 2000 chefs across 5 continents dished up, at the same time, a menu featuring gourmet French cuisine (aperitif and canapés, entrée, main course(s), dessert, and French wines and champagnes), making this a must-attend internatio­nal culinary event. More than 65 restaurant­s had been selected across India, Nostalgia at 1911 Brasserie being one of them, by the committee of internatio­nal chefs headed by Chef Alain Ducasse, placing India among the top participat­ing countries!

Nostalgia at 1911 Brasserie is a classic western cuisine restaurant at The Imperial and blended Imperial’s own culinary culture with that of France, through one of the finest menus featuring French classics like Mushroom and onion on tart; Potato and poached egg and black ham dumplings with black truffle butter; Chilean sea bass, assorted stir fried vegetable with orange and ginger sauce; Caramelise­d duck breast with spices, chestnuts dumplings, apple and red cabbage in a star anise sauce ; Sao tome Bitter chocolate cake; Pear sorbet, assorted red berries compote scented with Pinot noir and Pineapple tart, salted butter caramel sauce and streusel ice cream.

Chef Prem K Pogakula- Executive Chef, The Imperial said, “French food is based on local sourcing of very simple ingredient­s paired with good-old wine and hand-picked variety of cheese. The cuisine has already been influenced in terms of standardis­ing menus and presentati­on so the day is not far when Indians will be more familiar with French specialtie­s and classic ingredient­s.

“The French culinary events like Good France is a great initiative to promote French gastronomy in India and it’s a privilege for us at The Imperial to be part of an internatio­nal gourmet event at a global level. We at The Imperial use exclusive French cheese, cream, butter, seafood and meats to keep the local flavours intact and these local ingredient­s only help in achieving a perfect dish which our French guests relish.”

He further said, “Chefs and hotels have already been implementi­ng popular French dishes in the menus and promoting the cuisine through various festivals.
