Flour: 250gms

Sugar: 250gms

Curd: 250gms

Oil: 175ml

Baking Powder: 5gms Whipped French Cream: 250gms Mascarpone Cheese: 175gms Whipped Rich Cream: 175gms Fresh Strawberri­es (chopped & sliced)

Sliced Roasted Almonds

METHOD

●Add the flour, sugar, curd, oil and baking powder in a kitchen-aid. Mix everything together on speedy level till consistenc­y is smooth with no lumps.

● Take a baking mould and cover the base with foil.

● Pour the mixture till ¾ level of the mould and put it on a baking tray.

● Set the oven at 180 degree celsius. Once the oven reaches 180 degrees, put the baking try in. Bake for 25 to 30 minutes.

● Check the sponge by inserting a knife or toothpick. If it comes out clean, then the sponge is cooked.

● Take it out and leave it for cooling.

FROSTING AND LAYERING THE CAKE: ● For the frosting, mix the whipped French cream, mascarpone cheese and whipped rich cream together.

● Take fresh strawberri­es and divide each strawberry into two parts. Roughly chop half part and slice the other part.

● Cut the cake sponge into three layers.

● Take a sponge layer and soak it in sugar syrup(should not be too sweet).

● Spread the frosting over it equally and sprinkle the chopped strawberri­es.

● Repeat the above two steps for the second layer.

● On the final layer, put the frosting and place the sliced strawberri­es on top.

● With the help of a silicon brush, glaze the strawberri­es with a diamond glaze.

● Cover the sides of the cake with sliced roasted almonds.

Filmmaker Ashwiny Iyer Tiwari turns author for the first time with her novel Mapping Love. The book, set in the jungles of India, is said to be both enthrallin­g and touching.

“As a storytelle­r, every once in a while there are stories I want to tell in a medium that brings out their true essence,” shares Ashwiny. “It took me three years to type out Mapping Love, and I am filled with happiness."

The book is scheduled to be released in May 2021.

Meanwhile Ashwiny is doing the writing for a biopic on Narayana Murthy and Sudha Murthy, which she will be directing. An announceme­nt on the casting is expected soon.
