MAGGIE JOAN’S WINE DINNER
On the 9th August, The Ritzcarlton Jakarta, Pacific Place graciously hosted Chef Oliver from Maggie Joan's Singapore for a delightful wine-pairing dinner. Guests savoured an exciting Mediterranean-inspired five-course dinner menu crafted by Chef Oliver and The Ritz-carlton Jakarta, Pacific Place Executive Chef Sean Macdougall. Originating from the United Kingdom, Chef Oliver's youth belies his experience, boasting successful stints in the Michelinstarred kitchens of the Roux brothers, the Waterside Inn and Gordon Ramsay.
For the appetiser, diners enjoyed a tantalising dish of beef tartar, kimchi and smoked beef fat, paired beautifully with Freixenet Elyssia Pinot Noir. The second dish was silky burrata cheese, ripe plums and deep-fried shio kombu, matched with Babich Pinot Gris Marlborough. For the main course, a perfectly grilled lamb loin was served with black garlic sauce and refreshing smoked yogurt. The dish was sublimely paired with a glass of Duc des Nauves Côtes de Bordeaux. Two desserts were served to end the delicious affair, a dainty serving of coconut sorbet and rock melon ice, as well as a harmonious dish of goat cheese, honeycomb and sorrel. The dessert wine chosen for the pairing was Domaine du Tariquet Les Premières Grives Côtes de Gascogne. ritzcarlton.com
