On the 9th Au­gust, The Ritz­carl­ton Jakarta, Pa­cific Place gra­ciously hosted Chef Oliver from Mag­gie Joan's Sin­ga­pore for a de­light­ful wine-pair­ing din­ner. Guests savoured an ex­cit­ing Mediter­ranean-in­spired five-course din­ner menu crafted by Chef Oliver and The Ritz-carl­ton Jakarta, Pa­cific Place Ex­ec­u­tive Chef Sean Mac­dougall. Orig­i­nat­ing from the United King­dom, Chef Oliver's youth be­lies his ex­pe­ri­ence, boast­ing suc­cess­ful stints in the Miche­lin­starred kitchens of the Roux brothers, the Wa­ter­side Inn and Gor­don Ram­say.

For the ap­pe­tiser, din­ers en­joyed a tan­ta­lis­ing dish of beef tar­tar, kim­chi and smoked beef fat, paired beau­ti­fully with Freix­enet Elyssia Pinot Noir. The sec­ond dish was silky bur­rata cheese, ripe plums and deep-fried shio kombu, matched with Babich Pinot Gris Marl­bor­ough. For the main course, a per­fectly grilled lamb loin was served with black gar­lic sauce and re­fresh­ing smoked yo­gurt. The dish was sub­limely paired with a glass of Duc des Nauves Côtes de Bordeaux. Two desserts were served to end the de­li­cious af­fair, a dainty serv­ing of co­conut sor­bet and rock melon ice, as well as a har­mo­nious dish of goat cheese, hon­ey­comb and sor­rel. The dessert wine cho­sen for the pair­ing was Do­maine du Tari­quet Les Premières Grives Côtes de Gascogne. ritz­carl­
