Like its two predecesso­rs, this newest addition to the Kaum lineup is all about reviving classical cooking methods from all across Indonesia that are almost lost to time. The restaurant also makes a point of using the most traditiona­l ingredient­s wherever possible. This philosophy has led to delicacies like Mie Gomak from North Sumatra, Gohu Ikan Tuna from Maluku and many more indigenous dishes—some familiar sounding, others a mystery to be discovered.
