Like its two predecessors, this newest addition to the Kaum lineup is all about reviving classical cooking methods from all across Indonesia that are almost lost to time. The restaurant also makes a point of using the most traditional ingredients wherever possible. This philosophy has led to delicacies like Mie Gomak from North Sumatra, Gohu Ikan Tuna from Maluku and many more indigenous dishes—some familiar sounding, others a mystery to be discovered.
