The in­te­rior of Pala Adas is mas­ter­fully crafted to ex­ude the warm feel of In­done­sia's homey tra­di­tional am­bi­ence. In terms of culinary of­fer­ings, this el­e­vated In­done­sian eatery har­nesses the full po­ten­tial of In­done­sia's herbs-and-spices and re­fines them with modern pre­sen­ta­tion and de­liv­ery. One of the most sought after dish in Pala Adas is the green chilli duck, which uses more than 20 dif­fer­ent kinds of herbs and spices, a fine ex­am­ple of the restau­rant's core phi­los­o­phy.

Pala Adas started as col­lab­o­ra­tion be­tween en­tre­pre­neur and restaurateur May Farida and re­spected culinary ex­pert Hans Su­margo, and is lo­cated in the prime area of Pan­tai In­dah Ka­puk. As co-owner, and head chef, Hans takes great care in the con­sis­tency of Pala Adas' com­plex flavours and is highly in­volved in im­part­ing cre­ative di­rec­tion to his kitchen staff on a day-to-day ba­sis. Chef Hans only uses high-grade, fresh pro­duce in his cre­ations, in ad­di­tion to be­ing a firm prac­ti­tioner of oil-free, healthy cook­ing.
