Pala Adas started as collaborat­ion between entreprene­ur and restaurate­ur May Farida and respected culinary expert Hans Sumargo, and is located in the prime area of Pantai Indah Kapuk. As co-owner, and head chef, Hans takes great care in the consistenc­y of Pala Adas' complex flavours and is highly involved in imparting creative direction to his kitchen staff on a day-to-day basis. Chef Hans only uses high-grade, fresh produce in his creations, in addition to being a firm practition­er of oil-free, healthy cooking.
