Third-gen­er­a­tion chef Chen Kentaro not only helms Shisen Hanten by Chef Kentaro – the first over­seas out­post for the Ja­panese Sichuan restau­rant chain, Shisen Hanten – but has also main­tained its two Miche­lin stars for three years con­sec­u­tively. High­lights in­clude the fiery Chen’s Mapo Doufu, which fol­lows his orig­i­nal fam­ily recipe, and Sautéed Szech­wan Chilli Pep­per and Chicken.
