Mau­r­izio’s culi­nary jour­ney has in­cluded des­ti­na­tions such as Italy, France, USA, China and In­done­sia, how­ever, his pas­sion for cook­ing started early, in his home­town in the Apu­lia re­gion of south­ern Italy, where he honed his skills in his par­ents’ restau­rant on the shores of the Adri­atic Sea. “My par­ents had the restau­rant for more than 20 years. I was fas­ci­nated to be there all the time, work­ing be­tween kitchen and ser­vice. The chefs and the wait­ers were my role mod­els,” said Mau­r­izio.

Mau­r­izio re­calls his stints in Les Per­go­las at Le Méri­dien Beach Plaza and the pri­vate Monaco Yacht Club in Monte Carlo as the life-chang­ing mo­ments of his ca­reer. That be­ing said, the rest of his cook­ing ex­pe­ri­ence is just as im­pres­sive and in­cludes work­ing with Chef Em­manuel Lehrer and Chef Michel Rostang Paris in L’In­tempo, and open­ing and de­vel­op­ing Le Muse restau­rant – both at Le Méri­dien Beach Plaza. Since then Mau­r­izio has un­der­taken the chef de cui­sine po­si­tion at The Ritz-Carl­ton Sanya in China, later mak­ing a name for him­self on Bali’s culi­nary scene at Il Ris­torante at Bul­gari Ho­tels & Re­sorts in Bali, In­done­sia. His lat­est ven­ture is helm­ing the ex­clu­sive Mandapa, a Ritz Carl­ton Re­serve in Ubud, Bali.
