EXECUTIVE CHEF AT MANDAPA, A RITZ-CARLTON RESERVE
Maurizio’s culinary journey has included destinations such as Italy, France, USA, China and Indonesia, however, his passion for cooking started early, in his hometown in the Apulia region of southern Italy, where he honed his skills in his parents’ restaurant on the shores of the Adriatic Sea. “My parents had the restaurant for more than 20 years. I was fascinated to be there all the time, working between kitchen and service. The chefs and the waiters were my role models,” said Maurizio.
Maurizio recalls his stints in Les Pergolas at Le Méridien Beach Plaza and the private Monaco Yacht Club in Monte Carlo as the life-changing moments of his career. That being said, the rest of his cooking experience is just as impressive and includes working with Chef Emmanuel Lehrer and Chef Michel Rostang Paris in L’Intempo, and opening and developing Le Muse restaurant – both at Le Méridien Beach Plaza. Since then Maurizio has undertaken the chef de cuisine position at The Ritz-Carlton Sanya in China, later making a name for himself on Bali’s culinary scene at Il Ristorante at Bulgari Hotels & Resorts in Bali, Indonesia. His latest venture is helming the exclusive Mandapa, a Ritz Carlton Reserve in Ubud, Bali.
