The dish looks simple but it boasts an enchanting combination of textures and tastes. This delicacy was first created by Maurizio around six years ago, and every year he re-elaborates and creates a newer version, but the main ingredients are always there. “I think the combination between the scallop, Jerusalem artichoke, pumpkin and kaffir lime is perfect – a union between Western and Asian taste. This is also the guests’ preferred dish,” explained Maurizio.
