The dish looks sim­ple but it boasts an en­chant­ing com­bi­na­tion of tex­tures and tastes. This del­i­cacy was first cre­ated by Mau­r­izio around six years ago, and ev­ery year he re-elab­o­rates and cre­ates a newer ver­sion, but the main in­gre­di­ents are al­ways there. “I think the com­bi­na­tion be­tween the scal­lop, Jerusalem ar­ti­choke, pump­kin and kaf­fir lime is per­fect – a union be­tween Western and Asian taste. This is also the guests’ pre­ferred dish,” ex­plained Mau­r­izio.
