Inspired by a recent BBQ party, we decided to make this edition of Exquisite Taste all about meat. So while you can still have your chia seeds over local fruit for breakfast and sprinkle quinoa over your salad, our cover theme delves into the delicious depths of the best meat dishes in Jakarta, Bali, Singapore and Hong Kong.

From the most obvious delicacies starring beef, pork and chicken, to those in the acquired taste category, like lamb, venison, quail, duck and goose, we find the finest proteins. From dry-aged, coffee wood-smoked, to stuffed and spit-roasted, discover all the meaty goodness in between.

In search of even more appetising feasts to dish out, we highlight some of the hottest restaurant­s: Bengawan at Keraton at The Plaza, A Luxury Collection Hotel in Jakarta, Tamarind at Banyan Tree Ungasan in Bali, ADRIFT and Ginett in Singapore, and 8½ Otto e Mezzo BOMBANA and 12,000 Francs in Hong Kong.

Our love of food knows no bounds so we always enjoying talking to the people who helm the kitchens, this time learning more from chefs holding coveted positions in prestigiou­s dining destinatio­ns – James Viles from Biota, who’s currently collaborat­ing with The Ungasan Clifftop Resort and Sundays Beach Club, Daniel Edward at Bukit Pandawa Golf Course & Country Club, Tetsuya Wakuda at Waku Ghin and Eno Suratno in Sari Pan Pacific Jakarta.

Having feasted on all that rich food, we wrap up this edition with great cocktails from Bistro Baron, SAVOI, Sling Bar, 40 Thieves and Braci, and go in a sweeter direction with Cut Catch Cucina’s dessert selection at Sofitel Bali Nusa Dua Beach Resort.
