A brother­hood of Ital­ian Culi­nary Flair

The Cerea broth­ers have an en­vi­able rep­u­ta­tion for their creative and de­li­ciously au­then­tic cui­sine pre­sent­ing guests with an ar­ray of dishes steeped in the finest tra­di­tions of Italy.

It's been over 12 months since the broth­ers En­rico and Roberto Cerea opened the doors at their ac­claimed Fratelli Trat­to­ria and Pizze­ria lo­cated within Re­sorts World Sen­tosa (RWS) in Sin­ga­pore and, after a very ex­cit­ing year in­deed, the tal­ented Miche­lin-starred duo have just launched an ex­cit­ing up­grade to their al­ready ex­cel­lent menus.

Founded on al­most four decades of Miche­lin­starred her­itage since the 1970s, Fratelli em­bod­ies the ded­i­ca­tion of two gen­er­a­tions

of chefs in cre­at­ing the most au­then­tic and so­phis­ti­cated Ital­ian flavours. The celebrity chefs be­hind the restau­rant are En­rico and Roberto Cerea, whose fam­ily runs the iconic Three Miche­lin-starred Da Vit­to­rio in Lom­bardy, Italy. Fratelli is helmed by res­i­dent Chef Da­vide Biz­zarri from Pisa who ex­e­cutes Da Vit­to­rio's cel­e­brated Ital­ian gas­tron­omy with some style.

Sit­u­ated on Fes­tive Walk, as the name sug­gest Fratelli - which is Ital­ian for broth­ers - is two restau­rants in one. The Pizze­ria is an all-day-diner serv­ing up gourmet piz­zas, pas­tas, an­tipasti and se­lec­tion of sub­lime desserts, whilst the Trat­to­ria is an el­e­gant din­ner-only restau­rant that show­cases the very best of Da Vit­to­rio. The dis­tinct in­te­rior de­signs makes a clear state­ment about the food be­ing served. Trat­to­ria is el­e­gant with clas­si­cally dressed tables, moody light­ing and soft dec­o­ra­tive tones. The un­der­stated for­mal so­phis­ti­ca­tion is re­flected wholly in the clas­sic and creative Ital­ian fine-din­ing menu. No less at­trac­tive, but less for­mal, the Pizze­ria fea­tures an open kitchen, un­dressed

tables, rus­tic red brick walls and a stone floor. With a re­laxed am­bi­ence, it's the per­fect place for a fam­ily to tuck in to the fab­u­lous and ex­ten­sive range of gourmet piz­zas, pasta dishes and other clas­sic Ital­ian dishes.

Backed by a stel­lar bev­er­age list fea­tur­ing a su­perb se­lec­tion of wines, the new à la carte and set menus of­fers a range of new and sig­na­ture cre­ations from Da Vit­to­rio. Ex­pect the finest and fresh­est in­gre­di­ents im­ported from Italy as well as other parts of Europe – in­clud­ing bur­rata cheese from Puglia, Ciliegino toma­toes from Si­cily, bot­targa from Sar­dinia, fresh sea­sonal truf­fles from Um­bria and Abruzzo, 20 months cured pro­sciutto di Parma from Pio Tosini, a fam­ily-run ar­ti­sanal pro­ducer of Parma ham since 1905 and con­sid­ered the best in Italy, as well as top qual­ity seafood like Mazara del Vallo red prawns, white clams and mus­sels from Si­cily.

From the new Pizze­ria menu the deca­dent Pizza Oro Nero is strik­ing in both ap­pear­ance and taste. With a rich squid ink tomato sauce as its base, the pizza is topped off with scamorza cheese, cured cod, white clams, Si­cil­ian mus­sels, trout roe and even has a dust­ing of gold pow­der added be­fore be­ing cooked to per­fec­tion in the wood-fired oven.

At the Trat­to­ria, Fratelli's fresh hand­made pasta pays homage to Ital­ian culi­nary tra­di­tions and no dish more so than the square spaghetti pasta Chi­tarra. Served with braised beef short ribs ragout and black truf­fle shav­ings, the spaghetti is first in­fused with the flavours of braised beef and black truf­fles giving it un­be­liev­able rich­ness and com­plex­ity. Paired up with a Chi­anti Clas­sico it's hard to imag­ine a more Ital­ian fine-din­ing ex­pe­ri­ence. For seafood lovers the Aragosta, crema di Av­o­cado al Wasabi & mousse di Peper­oni at Trat­to­ria is sim­ply a must, whilst for those with a sweet tooth be sure to leave room for Ros­sella's Straw­berry Planet. Cre­ated by Chef Roberto's sis­ter Ros­sella, it arrives cov­ered in a meringue sphere which is smashed with some cer­e­mony at your table, re­veal­ing the de­li­ciously fra­grant and tex­tured straw­berry dessert below.

There are nu­mer­ous Ital­ian restau­rants in Sin­ga­pore and a few are just as al­lur­ing as Fratelli. But this gor­geous eatery has some­thing ex­tra, an al­most in­tan­gi­ble star-qual­ity that makes it dis­tinc­tive and ap­peal­ing, an at­tribute not lost on those who truly value the best and most au­then­tic Ital­ian flavours and style.
