In a stel­lar ca­reer span­ning three decades, Chef Gray Kunz has long been at the fore­front of de­liv­er­ing healthy, high-qual­ity food and, us­ing pre­dom­i­nantly or­ganic and non-GMO pro­duce, his ex­cit­ing new Café Gray Deluxe Re­vi­tal­is­ing Menu of­fers guests an en­tic­ing se­lec­tion of re­fresh­ing flavours and dishes that pro­mote a bal­anced life­style and em­brace the clas­sic elegance of Asian and Euro­pean culi­nary tra­di­tions.

Lo­cated at Pa­cific Place in Ad­mi­ralty and with stun­ning views over Hong Kong's iconic Vic­to­ria Har­bour, Café Gray Deluxe is the sig­na­ture restau­rant of The Up­per House, an el­e­gant lux­ury hotel de­signed by ac­claimed Hong Kong ar­chi­tect An­dre Fu.

Found on the 49th floor, the restau­rant of­fers a so­phis­ti­cated es­cape from the hubris of the city below. The design is sim­ple yet el­e­gant. There's a choice of seat­ing with rich chairs, deeply padded so­fas and raised chairs at the long bar. Dark woods, mood light­ing and deep coloured ac­cents cre­ate a warm am­bi­ence and, de­spite its for­mal­ity, the restau­rant is welcoming, both through the day and into the night. The pri­vate room fea­tures a ban­quet table and like the din­ing room has sen­sa­tional city and har­bour views through its panoramic win­dows.

The à la carte menu is im­pres­sive and in­cludes in­dul­gent desserts like the Grand Marnier bit­ter choco­late mousse and a lav­ish se­lec­tion of sor­bet and ice cream, whilst the mains in­clude the de­li­cious

smoked baby tur­bot, saffron pasta fiore and house-cured gravlax.

Com­ple­ment­ing the ex­ist­ing à la carte menus, the newly in­tro­duced Re­vi­tal­is­ing Menu fea­tures a se­lec­tion of beau­ti­fully crafted ve­gan and gluten-free dishes cre­ated with or­ganic, non-GMO and sus­tain­ably sourced pro­duce. Avail­able as a set three­course lunch and early supper ex­pand­ing to four for din­ner, it is bound to im­press.

The menu is up­dated ev­ery week as Chef Kunz strives to use only the best lo­cally grown, or­ganic and sea­sonal pro­duce wher­ever pos­si­ble. High­lights in­clude de­lights like the del­i­cate or­ganic tomato crudo with can­died kelp, served with a quenelle of ka­sundi and fresh sea­sonal herbs; light re­fresh­ing and aro­matic, it's a dish that fully re­flects the menu's con­cept.

Equally as fresh on the palate and with de­light­fully con­trast­ing tex­tures comes the chilled bean curd. A cube of chilled bean curd topped off with flaxseeds and served with fresh gar­den peas, pea vine, mint and an el­e­gant cu­cum­ber con­sommé.

One of the most aes­thet­i­cally pleas­ing dishes and de­li­ciously spicy too, is the whole-roasted cau­li­flower. Set atop a heap of flavoured buck­wheat and topped off with spiced dukkah the cau­li­flower is roasted and served with dol­lops of tangy lemon coulis. The set menus in­clude a dessert choice that fea­tures dishes like the won­der­fully bit­ter­sweet or­ganic bit­ter choco­late. An in­di­vid­u­ally pre­sented round of rich choco­late dec­o­rated with shred­ded co­conut, ed­i­ble flow­ers and sea­sonal berries topped off with a de­li­ciously fruity sor­bet quenelle – sim­ply ir­res­pirable!

Backed by a su­perb wine and cock­tails list and first-class ser­vice, Café Gray Deluxe, like the hotel, is a truly so­phis­ti­cated es­cape from the city and with the ad­di­tion of its Re­vi­tal­is­ing Menu has added yet more healthy choices to its al­ready ex­cep­tional din­ing ex­pe­ri­ence.
