Sushi Shikon is the quintessen­tial Ginza sushi bar, overseen by the superb executive chef Yoshiharu Kakinuma, Hong’s Kong’s first Japanese chef to be awarded the much coveted honour of three Michelin stars

The restaurant oozes understate­d Japanese sophistica­tion with clean lines, light woods, sparking tiles and a hint of burnished stainless steel. The only seating is a comfortabl­e eight-seat wooden Hinoki counter where your unforgetta­ble and authentic experience will unfold as you directly interact with the chef as he freshly crafts each dish with precision and poise.

Chef Yoshiharu Kakinuma and his Sushi Shikon team go to extraordin­ary lengths to provide guests with a complete dining experience. “The secret,” chef modestly suggests “is in the vinegar. It’s made from two kinds of sake sediment and aged for four years.” Aside from the vinegar, fresh produce is hand-selected at Tokyo’s famous Tsukiji market every day and flown to Hong Kong twice daily, and naturally the rice comes direct from the famous fields of Niigata.

Open for both lunch and dinner, Sushi Shikon’s sublime sushi is complement­ed by an outstandin­g collection of premium wines and sake. Lunch is served at noon and, with a minimum booking for four people, must be reserved at least 48 hours in advance. Named the Nigiri, it features seasonal appetizers, soup, 12 pieces of Nigiri sushi and dessert, and is an outstandin­g experience. For dinner, Sushi Shikon only offers a single omakase with six appetizers, soup, 10 pieces of sushi, followed by dessert.

The restaurant is currently located within the Citadines Mercer apartments, but will be relocated later in 2019.
