These days, as people stay home, more and more are turning to cooking and discoverin­g the joys of crafting exciting, nutritious dishes in their own kitchen. Chefs are supporting this move and helping amateur home chefs to up their game by sharing their own recipes and kitchen tips, including Master Chef of France Chris Salans from Bali's renowned Mozaic gastronomi­c restaurant.

Chris has been sharing tips, including keeping produce like fresh herbs and lettuce fresh for longer in the fridge by storing them in a cloth bag or wrapped in a slightly moist paper towel. He also notes that eating healthy supports the immune system, which means you can fight off infection and stay strong. Indonesia is home to a multitude of health-boosting spices that are easy to access, like ginger to warm the body and fight off chills, turmeric to improve endurance, and cinnamon, which is not only an antioxidan­t but also has antimicrob­ial and anti-inflammato­ry properties.

At Mozaic and Spice by Chris Salans, plenty of spices are used to amp up the flavour and boost health, including in the drinks. At Spice, guests enjoy the Energizer Mocktail, a refreshing drink served over ice, made by juicing two pieces of red or green apple, a medium carrot, one small sprig of celery, one teaspoon of fresh turmeric root, two teaspoons of fresh ginger root and a kaffir lime leaf.
