Chef Hugo is a master of meat and welcomes off-menu requests (within reason), especially those from the South American region from which he hails. His Peruvian specialty ceviche is a particular delight. That said, don’t let that lure you away from some of the other seafood dishes as Chef Hugo really cooks up a storm in the kitchen..
