New Zeala nd Lamb
Art Café by Raffles’ roasted lamb loin seals the deal. To balance out the juiciness of the meat, it is served with smoked aubergine purée, slowcooked tomatoes and garlic, potato fondant and lamb jus.
Perfect Egg
These perfectly poached eggs are served with veal jus, mushroom foam and roasted hazelnuts for a crunchy flavour. It is accompanied with a sea salt flower and baby mesclun. Oxtail Parmentier An interesting and delicious option is the slow-baked wine-braised oxtail topped with mashed potato and a sprinkle of butter crumbs. A fresh side of mesclun salad completes the dish.
Rendang Bun
This delicious dish is a blend of fried buns stuffed with a generous serving of beef rendang. They are then garnished with rendang sauce and Chimichurri drops. A twist on the much-loved Indonesian dish.
Lobster Amok
What better seafood than lobster? This Cambodian specialty involves marinating the lobster overnight in rich chili paste and coconut milk. For an extra plunge of flavour, the lobster is then steamed in a banana leaf cup.
