Jackelope is positionin­g itself as an immersive wine and culinary experience, where guests can indulge in the peninsula’s very best amid chic and artistic design. At Doot Doot Doot, tasting menus are drawn from the hotel’s kitchen garden and a unique wine list focuses on limited-release bottles from vineyards of 11 hectares or less (the same size as the Willow Creek Vineyard the hotel sits on), while restaurant and wine bar Rare Hare pays tribute to Mornington’s best grapes and cuisine.
