Four Foods for the Fearless
Freshly killed live cobras are eaten in snake restaurants in northern Vietnam. To avoid possible gastric distress, pass on trying the still-beating heart, fresh blood, and bile that comes with the meal. Cooked snake is served in courses in dishes such as soup, spring rolls, and baked filets.
Stir-fried pig fallopian tubes are popular in Singapore. They taste rather crunchy and springy, as you might expect.
In Vietnam, fried chicken heads are prepared with a sweet soy glaze. They have tender neck meat and are popped into your mouth, beak and all.
Bugs are typically eaten throughout Southeast Asia and are quite popular in Thailand. Look for deep-fried insects, like roaches, crickets, and worms, at street markets.
