Potted crab with Abernethy Smoked Butter

Churned in the heart of Co Down, award-winning Abernethy Butter is a local family business well known throughout Northern Ireland for its unique range of artisan products. The butter can be incorporat­ed into many unique recipes, including this potted crab dish, a savoury delight which can be enjoyed as a snack or starter.

WHAT YOU’LL NEED:

100g white crab meat

100g melted Abernethy Smoked Butter

Cayenne Pepper

Dash of Tabasco

Salt and Pepper to taste

METHOD:

Melt the butter gently in a saucepan and set aside.

Add a pinch of cayenne pepper and 2–3 drops of Tabasco — don’t add too much or it will overpower the delicate taste of the crab.

Season the crab meat with salt and pepper and mix in a teaspoon of melted butter.

Put the crab meat into ramekin dishes and pour over the remaining melted butter.

Chill in the fridge until the butter has set.

Remove the ramekins from the fridge and let them settle at room temperatur­e for one hour before serving.

Serve with toasted bread of your choice.
