St Ita’s students release their very own cook book
THERE’S no need to look any further than Crushrod Avenue for your mealtime inspiration, now that the students from St Ita’s Special School have released their very own cook book!
The three brilliant students involved in a major agri-Science project, launched their ‘Certified Irish Angus Beef Recipes’ cookbook last week, creating a delicious range of recipes.
“We are all so proud of them, and what they are achieving with this project,” said Mandy Fitzpatrick, who is co-ordinating the students with Michelle O’Mahony.
“They all worked closely with professional chef Lee Fitzpatrick, who used to work in Scholar’s and is now in the Conrad in Dublin and came up with six delicious recipes everyone will love.”
The students involved are Alisha Crosbie, Michael McQuillan and Conor Belton, and they are the only students from a special school in Ireland chosen to take part in The Certified Irish Angus Beef Schools Competition run by the Irish Angus Producer Group.
As part of the competition, the students received five Irish Angus Cross calves and they are required to set milestones through the lifetime of the animals.
“They had to attend the National Ploughing Championships in September 2017 where they met their calves for the first time, and they visited Amsterdam in February as part of the project,” explains Mandy.
“The cows are being kept on the farm of Gerry Myles from Termonfeckin, with great assistance also coming from Kieran Myles, and they will follow their progress right the way through to slaughter.”
The project aims to encourage second level students to gain an understanding about the care and attention that is required to produce and market the highest quality beef for consumers.
It allows students to apply the knowledge they learn in the classroom to a real-life setting and St Ita’s will receive the financial benefit involved in the selling of the animals.
“We will also be selling the cook book for €10, and the proceeds of that will go back into the project,” says Mandy.
