Jimmy’s rissoles on a roll

Jimmy’s Risssoles is on a roll.

The company that brought the humble Wexford delicacy to the national stage is in the final of Blas na hEireann awards for another dish with a local twist.

Rissole entreprene­ur Jimmy Barry is optimistic that once the judging panel in Dingle get a taste of the town, his creations will really take off.

Not that they haven’t already gone down well, with exposure on RTE and in the regional media adding to the popularity of Jimmy’s humble rissoles and his more exotic designer spring rolls.

Jimmy, who was made redundant from his job as deli manager of a local supermarke­t in 2007, took the initiative and trained as a chef with Fáilte Ireland. But even after this he was finding it difficult to make ends meet, so struck out on his own making rissoles.

And since then he hasn’t looked back, and is currently producing 5,000 rissoles and 1,200 spring rolls every week from his premises at Mooneys on the Quay.

Jimmy’s products are widely available in the county and are being sold in six Tesco stores in Dublin with another large supermarke­t chain currently looking for samples.

‘We’re thrilled to be nominated, it will boost business tenfold,’ Jimmy told this newspaper.

Jimmy’s potato spring rolls with Wexford Cheddar and spring onions wrapped in spring roll pastry will come under scrutiny by the Blas na hEireann judges on October 1 and until then the Wexford man is holding thumbs for a good result.

‘We are growing our product range at the moment, with the rissoles, spring rolls with homemade bread stuffing in a light crispy batter and have a new rissole in R&D with Wexford black pudding which should be ready for sale in the coming weeks,’ said Jimmy.
