Phelim’s little helpers are real master chefs!
THERE was plenty to tickle the tastebuds at The Riverside Park Hotel on Tuesday night as Enniscorthy Credit Union hosted a special cookery demonsration with renowned chef Phelim Byrne. The event drew a great interest from budding chefs young and old, who watched on engrossed as Phelim passed on hints and tips on some of his favourite recipes.
Phelim put on a great show, providing recipes that are nutritious and convenient and also providing the best value for money on a tight budget. He was ably assisted on the night by Madison O’Neill and Aoife Doyle who just might just look to follow in his footsteps themselves one day! The audience were impressed with the display and a few of them would’ve left with enough inspiration to be that bit more creative in the kitchen. A raffle of the food cooked by Phelim and a meat voucher provided by the Credit Union were the top prize won by Angela O’Leary on the night.
The evening was also used as occasion to launch the Brenda O’Neill Memorial Scholarship Draw which now offers €9,500 to a total of eight local students starting in 3rd level education. This year, the scholarship carries the name of Brenda, a former member of staff who passed away earlier in the year.
Pat O’Shea, Chairman, spoke on behalf of the Credit Union and stated that they were proud to rename the Scholarship, which was close to her heart, in Brenda’s memory. Brenda worked in the Credit Union for 35 years until her retirement in 2015 and her friendly smile and easy-going nature are remembered by staff and members alike.
