BASIC GLOSSARY

‘Serves or makes 1 or many’ means that you can multiply the recipe to serve as many as you want.

BREAKFAST TARTINE

MAKES 1 OR MANY Spread a generous layer of ricotta on sourdough toast, sprinkle with chopped pistachios (or your favourite nuts) and drizzle with your best honey.

MARGHERITA MUFFIN

MAKES 1 OR MANY Split an English muffin in half, toast it and spread with passata, some torn buffalo mozzarella and halved cherry tomatoes. Grill until melted. Top with fresh basil and salt and pepper.

FAB FRENCH CHIX

SERVES 4 Brush 4 chicken breasts (with skin on) with olive oil. Squeeze over fresh lemon juice and sprinkle with dried tarragon and paprika. Roast at 180C uncovered for about 30 minutes.

BLACK OLIVE DIP

SERVES 4-6 Whiz 70g black olives with 1 anchovy, 1 teaspoon each capers and finely chopped garlic, 1 tablespoon parsley and 60ml extra virgin olive oil. Add 10ml each red wine vinegar and lemon juice and season with black pepper.

SESAME CRUSH ICE CREAM

SERVES 4 Crush 50g sesame snaps and fold into 500g slightly softened vanilla ice cream. Re-freeze and garnish with extra sesame snaps to serve.

RED PEPPER SOUP

SERVES 4-6 Sweat 170g chopped onion with 1 teaspoon chopped garlic. Add 800g tinned tomatoes, 5 roasted red peppers, 1 litre vegetable stock and salt and pepper. Simmer for about 25 minutes. Purée. Top with some orange zest and créme fraîche, if wished.

SMOKY BEEF SKEWERS

SERVES 4 Mix 2 tablespoon­s each smoked paprika, lemon zest and olive oil with 1 tablespoon each finely chopped garlic and dried mint. Season with salt and pepper. Rub into 500g diced beef and marinate overnight. Thread on to skewers and grill.

COURGETTE CARPACCIO

SERVES A CROWD Peel long strips of yellow and green courgettes. Plate and dress with equal parts lemon juice and extra virgin olive oil. Top with shaved parmesan, fresh basil and salt and pepper.

FISH FINGER TACO

MAKES 1 OR MANY Place 1 cooked fish finger in a soft taco. Garnish with avocado slices and quartered cherry tomatoes and top with natural yoghurt, fresh coriander and salt and pepper.

BOOZY BERRY FOOL

SERVES 1 OR MANY Pour a glug of Cointreau over seasonal berries. Leave for 1 hour (or more). Spoon over crushed meringue and top with whipped cream and fresh mint.
