BATTERED BURGER
IT may look like a Big Mac but this sweet, indulgent treat is probably even more likely to clog your arteries.
WHAT YOU NEED: Basic pancake batter plus red, yellow and green food colouring. Then, per burger: 1 tbsp icing sugar, 30g desiccated coconut, two large double chocolate chip cookies, 20g melted milk chocolate and a pinch of sesame seeds. You will also need a 9cm round
metal cutter to shape your pancake patties.
HOW TO MAKE IT: Use the cutter to slice two pancakes into perfect circles and put two cookies — sandwiched together with melted chocolate – on top of one of them. This is the ‘patty’. The ‘ketchup’ and ‘mustard’ on top are made by mixing a few drops of red and yellow food colouring with icing sugar and a splash of water. The ‘lettuce’ is made by adding green food colouring to desiccated coconut. Top with the other ‘bun’ and sprinkle with sesame seeds.
VERDICT: Even close up, this sickly-sweet creation really does resemble a burger. Children will love it – but I’m not so sure. Give me good old lemon and sugar any day.
