TRADITIONA­L small pancakes in every colour of the rainbow.

WHAT YOU NEED: Classic pancake batter: 200g self-raising flour, 1 tsp baking powder, 1 tbsp caster sugar, 200ml milk, 3 eggs, 25g melted butter. Makes 12. The key ingredient for this tasty treat is food dye – gels are best – in at least four vibrant colours HOW TO MAKE IT: Divide the batter into bowls for dyeing. Add the colouring a few drops at a time, stirring thoroughly. Heat a frying pan, greased with butter, and spoon in batter one colour at a time. The pancakes need two to three minutes on each side. Keep hot in a low oven until the other colours are ready. Finally, stack and drizzle with honey.

VERDICT: A feast for the eyes. The pancakes pop with colour and are light, fluffy and delicious. The food colour doesn’t affect the taste.
