Ham and corn fritters

Serves 6

150g plain flour 1 tsp baking powder Salt and black pepper 1 tbsp sugar 2 eggs 80ml milk 180g leftover cooked ham, chopped 400g tinned corn kernels, rinsed, drained 1 red pepper, finely chopped 6 spring onions, finely chopped 1 tbsp chives, chopped Sunflower oil, to shallow-fry To serve: Rocket Sour cream Sweet chilli sauce 1 Sift the flour, baking powder and one teaspoon of salt into a bowl along with the sugar.

2 Whisk the egg and milk in a separate until well combined, the stir into the flour until you have a smooth consistenc­y.

3 Add the ham, corn, pepper, spring onion and chives, then stir to combine. Season to taste with salt and black pepper.

4 Heat 1cm of sunflower oil in a frying pan over a medium-high heat. Using a heaped tablespoon of batter for each fritter, add 3-4 spoonfuls to the pan and cook for 2-3 minutes each side until golden. Keep warm while you repeat to make 12 fritters in total. Serve with the tomatoes, rocket, sour cream and chilli sauce.
