÷SPEAKING of health, Derry and I got a lovely healthy surprise last week — an early Easter gift of Margaret’s Happily Free Range Eggs. There were white eggs, eggs enriched with omega-3 and regular free-range eggs for all to enjoy. Eggs are so easy for me to do. They are a great source of protein and so easy to prepare.

During the last big snow, we had eggs for breakfast, on our burgers and with smoked salmon on different days. Even Derry reckons I make better poached and scrambled eggs than he does. Praise indeed.

Even though I don’t have children to cook for any more, I still love a boiled egg with toast. There’s nothing better.
