SIMPLY choose your favourite marinade, add the ingredients to an empty jam jar and shake well before use.

5 SPICE MARINADE

4 stalks of lemongrass, chopped 3 tbsp lemon zest 3 garlic cloves, minced 2-3 shallots, minced 2 red chillies, minced 3 tbsp fish sauce (nam pla) 3 tbsp lime juice 2 tsp Tabasco sauce

Perfect for chicken thighs

½ cup freshly squeeze orange juice ¼ cup no added sugar ketchup 2 tbsp soy sauce 2 tbsp lemon juice ¼ tsp pepper
