LENTILS. A study found people who swapped rice for lentils had a 20% drop in blood sugar levels and avoided blood sugar spikes, which reduces the risk of type 2 diabetes. It is thought lentils contain tannins and phenolic acids that inhibit enzymes that absorb glucose, which reduces blood glucose levels, said researcher­s at the University of Guelph in Canada.
