‘I WAS ringing to order more stock when you were trying to get through to me the first time,’ says Jennifer Kane, who runs Scrumdiddl­y’s ice cream parlours in Dun Laoghaire and Donabate with her partner Darren McCormack, above. ‘We are mental busy, it’s been the stuff of dreams.

‘But it was a very long winter, to be honest with you. We normally kick off on Paddy’s Day but we had snow around then this year. It was a bit daunting and we were thinking, when is the season going to start? But we’re making up for it now. It’s been fantastic.

‘Everyone’s in great form, they’re coming through the door delighted. Even if they’re working, they’re coming out for a stroll on Donabate beach or Dun Laoghaire pier in the evenings. The numbers are unpreceden­ted. We are actually expanding our business and have exciting news coming in the next few weeks!’
