HOW TO COOK WELL WITH RORY O’CONNELL, 8.30PM, RTÉ ONE

LAST year was perfect for courgettes, with many growers reporting bumper crops. This year has been worse (for all manner of reasons, 2020 is unlikely to be remembered for its low zucchini yields) but should you find yourself with a good stock of the mini-marrows then Rory’s recipe for courgette soup is a must.

He’s continuing to celebrate top-quality produce in his fifth series, while also coming up with dishes that are simple to create. Tonight’s show also includes salt hake with roast peppers and basil, and a decidedly tempting dried date, fig and almond chocolate cake. As Rory (pictured) says himself: ‘I want to give people confidence in the kitchen.’
